This Field Blend is a single vineyard wine whose grapes are grown, harvested and vinified together. The blending is done in the vineyard not in the winery. The Cabernet Sauvignon and Merlot are picked simultaneously and the flavour profile is determined by the two cultivars and what they offer during fermentation.
Tasting notes: Lovely sweet black fruit and tea leaf flavours upon entry. The barrel maturation adds a nice spiciness to the wine with an excellent cedar oak finish. A good example of balance and great depth in this wine. This will pair well with matured steak and game dishes. Can be enjoyed upon release, but will develop and age very well for up to 10 years in the bottle.
Bouquet: Abundance of sweet red cherries, candyfloss and ripe strawberry aromas. Clean and crisp entrance, refreshingly dry with good acidity. A medium bodied Rosé that is layered with sweet red berries. Hints of buttery, creamy notes add complexity to this serious and delightful Rosé, finishing off with a lingering aftertaste of red cherries and sweet strawberries.
Winemaking: Pinotage grapes were picked at about 22.5 balling, lightly crushed and left on the skins for about 8 hours to extract sufficient amounts of colour and structure. The juice was separated from the skins and primary fermentation took place at 11ºC for three weeks. After primary fermentation the wine was left on the wine lees for three months and stirred up twice monthly to give the wine a more balanced and elegant mouthfeel.
Vintage Notes: Despite good rainfall, the region was still affected by the preceding drought and realised a much smaller crop for the second year in a row. The start of the harvest was more normal and the early cultivars ripened well. The late cultivars ripened more uneven and later. The quality of the wines so far look really good.
